Spicy Pineapple Glazed BBQ Chicken Skewers
Ingredients:
- 4 boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup pineapple juice
- 1/2 cup ketchup
- 1/4 cup soy sauce
- 3 tablespoons brown sugar
- 2 tablespoons apple cider vinegar
- 2 tablespoons sriracha sauce (adjust to taste)
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt
- Wooden skewers, soaked in water
Instructions:
- In a bowl, combine the pineapple juice, ketchup, soy sauce, brown sugar, apple cider vinegar, sriracha sauce, minced garlic, smoked paprika, black pepper, and salt. Mix well to create the marinade.
- Place the chicken cubes in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it's evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or preferably overnight to allow the flavors to develop.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken onto the soaked wooden skewers, dividing it evenly among the skewers.
- Grill the chicken skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice charred exterior.
- While grilling, baste the chicken skewers with the leftover marinade to enhance the flavors.
- Once the chicken is cooked, remove from the grill and let it rest for a few minutes.
- Serve the spicy pineapple glazed BBQ chicken skewers with a side of grilled pineapple rings and a sprinkle of chopped cilantro for garnish.

Note: You can adjust the level of spiciness by increasing or decreasing the amount of sriracha sauce according to your preference.
